We do actually have confirmation that immortal parent is her mother, in the battle of the labyrinth I think it's Kyron explaining Percy how when Clarice was visiting her mother she found Chris Rodriguez in the desert after he'd come out out of an entrance/exit of the labyrinth. But I wouldn't doubt it if Ares popped her out
