This spicy vegan “tuna” with crunchy cucumber and rice is such a good combo😋🫶🏻🥒🍚 Spicy “tuna” cucumber sushi Ingredients: For the cucumber base: • 2 large cucumbers • about 1½ cups cooked sushi rice For the “tuna” filling: • 1 can (430 g) chickpeas, drained and rinsed • 1 pickle, finely chopped • 1 celery stalk, very finely chopped • 2 tbsp onion, very finely chopped • 1 nori sheet, finely chopped • 1 tbsp mustard • 2 tbsp vegan mayo • Salt to taste Toppings: • 1 jalapeño, sliced • Teriyaki sauce • Spicy sauce • Sesame seeds • Green onion, chopped For serving: • Soy sauce How to make: 1. Cut the cucumbers in half lengthwise and scoop out the seeds with a spoon to create boats. 2. Fill each cucumber half with sushi rice, pressing gently so it holds its shape. 3. In a bowl, mash the chickpeas with a fork until flaky. 4. Add the pickle, celery, onion, nori, mustard, vegan mayo, and salt. Mix well. 5. Spoon the chickpea “tuna” mixture over the rice. 6. Top with sliced jalapeño. 7. Drizzle with teriyaki sauce and spicy sauce. 8. Sprinkle with sesame seeds and green onion. 9.
