Paneer Dum Biryani Recipe 🍽️ Servings: 4 | ⏱️ Total Time: ~1 hour --- 🧾 Ingredients: For the Rice: 1.5 cups Basmati rice (preferably aged) 5–6 cups water 1 bay leaf 3–4 green cardamoms 1–2 cloves 1-inch cinnamon stick Salt to taste For the Paneer Marinade: 250g paneer, cubed 1/2 cup thick yogurt (curd) 1 tbsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chili powder 1/2 tsp garam masala 1/2 tsp coriander powder Salt to taste 1 tbsp lemon juice Fresh coriander & mint (chopped) 1 tbsp oil For the Biryani: 2 medium onions, thinly sliced 1/4 cup oil or ghee (for frying onions) A few saffron strands soaked in 2 tbsp warm milk 1 tbsp rose water (optional) 1 tbsp kewra water (optional) Fresh coriander & mint for layering --- 🔪 Instructions: 1. Cook the Rice: Rinse basmati rice until water runs clear. Boil water with whole spices and salt. Add rice, cook until 90% done (grains should still have a slight bite). Drain and set aside. 2. Marinate the Paneer: In a bowl, mix all marinade ingredients. Add paneer cubes and coat well. Let it marinate for at least 20–30 minutes. 3. Fry Onions (Birista): Heat oil/ghee in a pan, fry onions till golden brown and crispy. Drain on paper towel. Reserve some for garnishing. 4. Cook the Paneer: In a wide heavy-bottomed pan, lightly sauté the marinated paneer for 5–7 minutes until coated and slightly golden. 5. Layer the Biryani: In the same pan (or a separate heavy-bottomed pot), start layering: 1. A layer of paneer mixture. 2. A layer of rice. 3. Sprinkle fried onions, mint, coriander, saffron milk, rose/kewra water. 4. Repeat layers. Finish with rice, toppings, and a drizzle of ghee. 6. Dum Cooking (Steaming): Seal the lid with dough (or cover tightly). Place on a low flame with a tawa underneath to prevent burning. Cook for 20–25 minutes.
