@tryingtofeedmyself: Would have been smoother if I had a food processor but still this is the best hummus I've ever made!! Simmered the soaked beans for 1.5 hours straight #hummus #recipes #fyp
So crossfaded I thought you meant that in a negative way 😭

I love how everyone is offering their tips and tricks in the comments instead of the usual, “that’s not how I was taught” vibe I see in so many food videos. As someone new to the Mediterranean diet after years of sickness, I’m learning a lot here. 🖤

Quick tip, add baking soda while cooking it'll help break down the chickpea skin making it much smoother

You have to spend time de-shelling them. The translucent outer skin is what makes it grainy.

Pulse the strained beans in a food processor, not blender, then stream in the reserved bean juice till you have a velvety consistency. Then add the garlic cloves and run till it is smooth. Stream in tahini and lemon juice, alternating, until combined. Serve with a dash of olive oil. Trust me habibiti. You will have fire garbanzo paste. Dm if questions because i love sharing knowledge. Oh and canned chickpeas, soaking and cooking is overrated and a waste of time

If using dried instead of canned, I found adding a pinch of sodium carbonate or bicarbonate to the soaking water helps. My water is very acidic and acid prevents proper breakdown of pectin

Chick peas can be tough if not cooked long enough.

even canned chic peas should be boiled longer ..

Ok. Now this step is a bit of extra work but… yes, overcook them but instead of blitzing in food processor, just mash them up a bit and then pass it through a sieve with a wooden spoon. This gets rid of the skins and leaves it smoother than silk.

My personal favorite is to add roasted red peppers to it as I'm blending. With garlic and tahini (sesame paste) it's amazing
