@velcheva.vibe: BEETROOT MOSS CAKE It’s often called a sponge cake because of its airy, porous texture 🧽 Paired with a classic raspberry sorbet, my beetroot “moss” turns into a truly elevated dish - in color, texture, and flavor - and it’s something you can absolutely recreate at home. That slightly earthy, familiar vegetable flavor combined with tart, fragrant raspberry is definitely not something most of us grow up eating… but trust me, it’s worth trying 🍧 I’m always all about reinterpretation - in cooking, in art, in fragrance. I truly believe that the more layers of meaning and interpretation you add, the more interesting the final “canvas” becomes. This shows up not only in my kitchen, but in my work too - if you only knew how many note combinations and scent pyramids I go through before approving a final composition 🤓 And yes, there have been plenty of experiments in my kitchen - you’ve seen them yourselves 😁 So far, not a single one has been a failure!
