Your sieve demo implies fibre blocks sugar like a filter. That is not how human digestion works. Sugar is absorbed through intestinal cells, not poured through a hole that fibre can clog. Soluble fibre can slow the rate at which glucose is absorbed by forming a viscous gel, but it does not prevent absorption. The visual is simple, and it is not physiologically accurate.
