- Go for Turkish or Iranian pistachios over Californian ones as they are greener and richer in flavor. The Californian variety still tastes good, but the former options are better. - Make sure you buy the unsalted pistachios; - When roasting pistachios, brown them as little as possible as that will determine the colour of your butter. It should take around 5-7 minutes. - Use a food processor instead of a blender as nuts take time to blend. Food processor is easier to handle and won't strain your blender. - If you want to get them as green as possible, blanch the raw nuts in boiling water for 30s (no more!). Put them in a towel, and rub to get the shells off. Then roast for a minute or two longer as you would with the unblanched ones (around 8 min.); - For chunky pistachio butter, blend 3/4 of the nuts into a smooth paste, then pulse in the remaining nuts. - To sweeten, add honey or agave syrup after fully blending. Avoid sugar as it won't dissolve.  Method: 1. Roast pistachios in 180°C/350°F for about 5-7 minutes, stirring halfway. 2. Let them cool for a few minutes and remove any loose skins. 3. Add to the food processor and blend, scraping down the sides occasionally. Be patient and keep blending. If it remains too chunky after 10 minutes, add 1 tbsp of neutral oil. 4. Store in an airtight container in the fridge
