Garlic Butter Pepperoni Pizza Topped Chicken Quesadillas  For the nights you want the best of both worlds 🤌🏼 Crispy chicken quesadillas topped with pizza sauce, mozzarella, pepperoni and garlic butter. An easy high protein fakeaway dinner that’s perfect for busy weeknights ❤️ Ingredients (serves 2): 
250g chicken breast, diced small
1 tsp garlic granules
1 tsp Italian seasoning
1 tsp smoked paprika
Salt
Black pepper
1 white onion, diced
1 red pepper, diced Pizza sauce
100g passata
1 tsp tomato purée
½ tsp garlic granules
½ tsp dried oregano
 Quesadillas
4 mini tortilla wraps
80g mozzarella, grated
8 slices pepperoni, halved 15g lighter butter spread  1 tsp chopped garlic  1 tsp fresh chopped parsley ✨Season the chicken with the garlic granules, Italian seasoning, smoked paprika, salt and black pepper. ✨Fry the chicken until almost cooked then add  the onion and red pepper and cook until softened. ✨Mix together all of the pizza sauce ingredients with salt and pepper.  ✨Add half of the pizza sauce to the chicken mixture and stir.  ✨Divide the chicken mixture between the wraps, spreading it over one half of each wrap. Scatter over half of the mozzarella. ✨Fold each wrap over into a half moon shape and press down gently. ✨Pan fry the wraps for a couple minutes each side until golden. Transfer to an air fryer basket.  ✨Spread the remaining pizza sauce evenly over the tops of the quesadillas. ✨Sprinkle over the remaining mozzarella and arrange the halved pepperoni on top. Air fry at 180°C for 3-4 minutes or place under a hot grill until the cheese is melted.  ✨Melt the butter spread and mix with the chopped garlic and parsley.
