@littleranchfamily: Sourdough isn’t just “another kind of bread”… it’s a completely different process. Most commercial bread is made fast, using one strain of yeast, and baked within a couple hours. Nothing really has time to change. Sourdough is slow. You’ve got wild yeast and bacteria working together for 24 to 48 hours, and that time is what makes the difference. During fermentation, the dough becomes more acidic, which kicks off a chain of reactions that start breaking things down. Grains naturally contain phytic acid, which binds to minerals like iron and zinc so your body can’t absorb them well… but sourdough fermentation produces enzymes that break that down, making those minerals more available. Same idea with gluten. It’s not gone, but it is partially broken down over time into smaller pieces-which is why a lot of people who don’t feel great eating regular bread do much better with sourdough-myself included. Not for celiac, but for general sensitivity it can help, which is why so many people who are generally gluten free, can eat sourdough! It also changes how your body processes it. Sourdough tends to digest slower, so instead of a sharp blood sugar spike… it’s more steady. And even though the heat of baking kills the live bacteria, what they leave behind matters. Fermentation creates prebiotic fibers that help support your gut. So when people say sourdough is different, it really is. i love baking sourdough & your loaf looks great! however i find the comments about “useless carbs” unnecessary and a bit classless. store-bought breads being a simpler carbohydrate (energy) doesn’t negate the other nutrients they’re enriched with & they last longer in the pantry thanks to the mold inhibitors! all breads and all carbs have their own pros and cons 🍞🤍

Also is really good, one of the main reasons I do sourdough bread is that when my mom eats regular bread she starts feeling sick but when she eats sourdough that doesn’t happen to her
