Preheat your oven to 350°F and line a loaf pan. 2. In a bowl, combine the flour, baking powder, and salt. 3. In another bowl, whisk together the sugar and eggs until smooth. 4. Add the Greek yogurt, oil, lemon juice, lemon zest, and vanilla extract, mixing until fully combined. 5. Add the dry ingredients into the wet ingredients, mixing gently just until incorporated. 6. Transfer the batter to your prepared pan, adding blueberries in layers and spread evenly. Bake for 45–55 minutes, until a toothpick inserted in the center comes out clean. Let cool for 10 minutes in the pan, then transfer to a rack to cool completely. Blueberry glaze: 1. Warm around 3/4 cup blueberries in a small pan until soft and bursting, then strain to get smooth juice. 2. In a small bowl, whisk together the powdered sugar, blueberry juice, and lemon juice until smooth. 3.
