EASY MEALS FOR 2, EP. 12 Beef Pepper Rice Ingredients * 2 cups cooked cold rice * 300g thinly sliced beef brisket (or ribeye) * 1 cup frozen mixed vegetables (peas, carrots, corn) * 1 onion about 120g * 2 green onions, sliced * White parts (about 15g), finely chopped * Green parts (about 13g), sliced for garnish * 10g garlic, minced (about 3 cloves) * 1 tbsp neutral oil * 1 tbsp butter * Salt, to taste * Freshly cracked black pepper, generously Sauce * 3 tbsp soy sauce * 1 tbsp oyster sauce * 1 tbsp mirin * ½ tbsp brown sugar * 1 tbsp water Instructions 1. Make the sauce. In a small bowl, whisk together the soy sauce, oyster sauce, mirin, brown sugar, and water. Set aside. 2. Heat a large skillet or cast-iron pan over medium-high heat and add the oil. 3. Add the sliced onion, minced garlic, the white parts of the green onions, and the frozen mixed vegetables. Sauté for about 2–3 minutes, until fragrant and the vegetables are just tender. 4. Push the vegetables into the center of the pan and pile the cooked rice on top. 5. Arrange the sliced beef around the rice in a single layer. 6. Pour the prepared sauce evenly over the rice and beef. 7. Season generously with salt ( to taste ) and lots of freshly cracked black pepper. 8. Scatter the extra corn and the green parts of the green onions over the top, then place the butter in the center of the rice. 9.
