Cinnamon Sugar Pretzels with a rich chocolate sauce – you can thank me later 🥨 - Makes 12 pretzels For the pretzel dough: 500g strong baker’s flour 350ml full cream milk 10g dried yeast (or 20g fresh) 60g caster sugar 60g butter 10g salt For boiling: 2L water 1/2 cup (120g) bicarbonate of soda For the egg wash: 1 egg + 50ml milk whisked well For the topping: 100g melted butter 150g cinnamon sugar (100g sugar + 10g cinnamon, mixed) For the chocolate sauce: 300ml thickened cream 300g good quality milk or dark chocolate Combine the flour, milk, yeast, sugar, butter, and salt, and knead until the dough is smooth and elastic, passing the gluten window test. Place the boiled pretzels on a lined baking tray, brush with egg wash and bake at 200°C for 12-15 minutes, or until golden brown. While the pretzels are still hot, brush them generously with melted butter and coat them in cinnamon sugar. For the chocolate sauce, heat the cream until simmering, pour it over the chopped chocolate, and stir until smooth and glossy. Serve the pretzels warm with the rich chocolate sauce for dipping.
