Baked Zucchini & Carrot Veggie Wraps.
These are a great low-carb, gluten-free alternative to traditional tortillas or bread.
Ingredients:
For the Veggie Base:
* Zucchini:1 medium, finely shredded (grated and squeezed all liquid)
* Carrots:1 medium, finely shredded (grated)
* 1 large egg
* Cheese: 1/3 cup shredded cheese (Mozzarella or Parmesan works best to help bind it)
* Seasoning: Salt, black pepper
* unbleached paper: For baking
For the Filling:
* Chicken: 2 cooked chicken breast, sliced or grilled
* Greens: Fresh arugula (rocket)
* Tomato:1 medium tomato, sliced into rounds
Tzatziki Sauce:
* 1/2 cup Greek
* 1/2 tsp garlic
* 1tsp lemon
* 1tbsp shredded cucumber
* 1tsp dill
* 1tbsp olive oil
* Salt
* Chili flakes (optional)
Instructions:
1. Make the Batter:
* In a large mixing bowl, combine the shredded zucchini and carrots.
* Crack the egg into the bowl.
* Add the shredded cheese and your seasonings (salt, pepper).
* Mix everything thoroughly until well combined.
2. Form the Wraps:
* Preheat your oven to 350F
* Line a baking sheet with unbleached parchment paper.
* Spoon the vegetable mixture onto the parchment paper. Divide it into two equal portions.
* Use a spoon or spatula to flatten and spread the mixture into thin, round circles (about the size of a tortilla). Make sure they are even thickness so they bake uniformly.
3. Bake:
* Place in the oven and bake for 20-25min minutes, or until the edges are golden brown and the center is set and cooked through.
* Optional: If you want them crispier, you can broil them for the last minute (watch closely so they don't burn).
4. Assemble the Wraps:
* Remove the baked veggie circles from the oven. Carefully peel off the parchment paper (they peel off easily once cooled slightly).
* Lay one circle flat on a cutting board.
* Spread a layer of your sauce over the base.
* Add a handful of fresh arugula.
* Place the chicken on top of the greens.
* Add the tomato slices.
* Drizzle a little more sauce over the tomatoes.
* Fold the wrap over (like a taco) or place the second veggie circle on top to make a sandwich.
