Let’s get Fancy today with our steak! Here I show you how to make a steak dinner from start to finish that will be sure to impress!  • 1 large parsnip, peeled and cut • 1/3 cup heavy cream • 3-4 sprigs fresh thyme • 4-6 crushed garlic cloves • 2 sirloin filets or filet Mignon  • Salt and pepper • Olive oil • Unsalted Butter • 6-8 small carrots, washed with skin on • 2-3 king trumpet mushroom, cut in half and scored as shown • Additional salt and pepper to taste • Lemon zest for carrots (optional) Start by heating up some water while you peel and cut your parsnip. I like to start with water that is warm but not boiling, then bring the parsnips to a boil and simmer for 15-20 mins or until fork tender. Also heat up the heavy cream on low heat with 2-3 cloves of garlic and 1-2 sprigs of thyme. This will infuse as it hears up.  Now we can season our steak with salt and pepper, and heat up a skillet over medium-high heat and add in some olive oil. Sear for 45-60 secs per side, then let the steaks rest.  In the same pan, Toss in 2 tbsp of butter and melt that down over medium heat before adding the carrots and 2-3 cloves of garlic. Let the carrots caramelize, which should take 5-10 mins depending!  Remove the carrots, add more butter, long with fresh thyme before placing in the mushrooms cut side down. These will absorb a ton of the flavor we have built so far. Sear for 2 mins or so, flip and sear for 45 seconds before butter basting.  When the mushrooms are done, add the steaks back in and base those as well! When they hit an internal of 129, let them rest.  To finish the purée, blend the parsnips with the cream and rub through a strainer or sieve!
