why the flakey salt? I can only see drawbacks with it. Falls off easily, hard to judge amount, doesn't absorb as quickly, more expensive.

Try it on a BBQ with a lid, low and slow indirect to render the fat more, you'd never do it this way again, I know I didn't 😮💨 Burnt ends slap 🔥
