Hot Honey Crispy Chicken Tenders Ingredients Chicken • 3 chicken breast fillets Wet Batter • 500 g homemade buttermilk (made with 500 g milk + 11 g lemon juice) • 1½ tsp salt • 1 tsp smoked paprika • 1 tsp cayenne pepper • 1 tsp garlic powder • ½ tsp onion granules Dry Batter • 307 g all-purpose flour • 46 g cornstarch • 1 tsp salt • ½ tsp garlic powder • ½ tsp smoked paprika • 1 tsp cayenne pepper • ½ tsp onion powder • ½ tsp black pepper Hot Honey Sauce • 43 g red sauce • 17 g honey • ¼ cup butter • Salt to taste • ½ tsp black pepper Garlic Mayo Sauce • Prepare your preferred garlic mayo sauce separately. Method 1. Prepare the chicken • Cut the chicken breast fillets into even-sized strips to make tenders. • If the chicken breasts are thick, slice them horizontally first so the tenders cook evenly. 2. Prepare the homemade buttermilk • Add 11 g lemon juice to 500 g milk and mix well. • Leave it for 5–10 minutes until the milk slightly thickens and curdles. • This will create homemade buttermilk for marinating the chicken. 3. Make the wet batter • Add the homemade buttermilk to a bowl. • Mix in salt, smoked paprika, cayenne pepper, garlic powder, and onion granules. • Add the chicken strips and coat them well. • Cover and marinate for at least 30 minutes (for best flavour, marinate longer). 4. Prepare the dry coating • In a separate bowl, combine flour, cornstarch, salt, garlic powder, smoked paprika, cayenne pepper, onion powder, and black pepper. • Mix well. 5. Coat the chicken • Remove each chicken strip from the buttermilk mixture and place it into the dry coating. • Press the flour mixture firmly onto the chicken to create a crispy crust. • For extra crunch, dip the chicken back into the buttermilk and coat again in the dry mixture. 6. Fry the chicken tenders • Heat oil to approximately 175°C. • Fry the tenders until golden, crispy, and fully cooked through (around 4–6 minutes depending on thickness). • Place them on a wire rack or paper towel to remove excess oil. #chickentenders #hothoneytenders
