It's literally just math, you guys, calm down. 😂 If I had to guess (because this is the only way that seems logical to me), it probably works by taking a timestamp as soon as the chunk is unloaded, then another timestamp as soon as the chunk is reloaded by you or anyone else, then it does the math to see if the crop should be regrown. It's (PROBABLY) not literally loading the chunk, it's just doing all the calculations and processing it accordingly when somebody comes back to the area.

Guys this mechanic is the same as on hypixel. When you leave the server, they measure the time you were away and simulate what would have happened when you return

fun fact, you can set the time mode to real time, meaning that blocks will tick even when you're literally offline. this proves that this mod does not lag your game whatsoever, that it just calculates how much time WOULD have passed the moment the chunk is actually loaded again.
