I didn't catch the struggle meal request as I have a few, growing up with alcoholic dad and fantastic mom who tried her best, I've got some. This recipe seems a little rich for struggle meal, shredded cheese...that's a luxury. One of my favorites that I still eat today, 1 can corn beef cubed up, 1 can tomato soup, cooked spaghetti. Mix together, throw it in a casserole dish, if you can, put a couple slices american cheese on top, throw it in oven to warm and melt cheese. My mom is a fantastic baker, she would make biscuits with it. That's it, eat it. If you have a big family needing a lot of spaghetti, could use 2 cans soup so not dry. And mom would add some leftover mashed potatoes to mix in if any in the fridge. That's a struggle meal but us kids thought it was great! Mom made homemade bread and rolls always, nothing like coming home after school to the smell of homemade bread/rolls in the house.
