Let’s cook together 💛 Ilish maach traditional Bengali fish curry What seafood dishes connect you to your family or culture? Ilish maach, also known as hilsa fish, is the national fish of Bangladesh and one of those foods that instantly connects me to my family and culture. This traditional Bengali curry is made with mustard oil, turmeric, chilli, green chillies and a simple onion-based curry sauce. Ilish has a rich flavour that I’d compare to mackerel, and it’s also a source of protein and omega-3 fatty acids. Ingredients * 4 slices ilish/hilsa fish * 1 very large onion or 2 medium onions * 2 garlic cloves * 1 tbsp ginger paste * 3 green chillies * 2 tbsp tomato powder or tomato purée * 250ml water * Fresh coriander * Rice and lemon, to serve For the fish * ½ tsp turmeric * ½ tsp chilli powder * 1 tsp salt * 2 tsp mustard oil For the curry * 3 tbsp oil * 1 tsp salt * ¼ tsp chilli powder * ½ tsp turmeric Method Marinate the fish with turmeric, chilli, salt and mustard oil. Cook the sliced onion, garlic, ginger, green chillies and spices for around 2 minutes. Add the tomato purée and 250ml water, then simmer for 15 minutes. Fry the ilish over a low-medium heat for around 5 minutes on each side, then around 1 minute on the skin to crisp the sides. Add the cooked fish to the curry, finish with fresh coriander and serve with rice and lemon. Ilish is a migratory fish, travelling between the sea and rivers to reproduce. Fisheries also support millions of livelihoods across Bangladesh, from catching and processing fish to transporting and selling it. For me, food like this is such a reminder of the journey our ingredients make from water to plate  and the people and places behind them.
