Sheet Pan Chicken Fajita Quesadillas This is the perfect family-approved dinner that’s quick, easy, cheesy, and made for busy weeknights. Ingredients 1 lb boneless, skinless chicken breast 8 burrito-size flour tortillas 12 oz Colby Jack cheese, shredded 2 bell peppers, sliced 1 onion, sliced 1 packet taco seasoning 1/2 cup black beans, drained (optional) 1–2 tbsp butter Creamy Taco Dip ⅓ cup mayo ⅓ cup sour cream 1 tsp taco seasoning (can add more) 2 tbsp mild taco sauce (I used Taco Bell-style) Directions 1. Preheat oven to 400F and grease a 9x13 sheet pan. 2. Slice chicken, peppers, and onion. Cook in a skillet until chicken is done and veggies are tender. Stir in taco seasoning with a splash of water. 3. Line six tortillas around the sheet pan with edges hanging over the sides. 4. Add half the cheese, chicken mixture, black beans if using, and remaining cheese. 5. Place two tortilla on top in the center, fold edges inward, and brush with butter. 6. Top with another sheet pan and bake 20 minutes. Remove top pan and bake 5–10 more minutes until golden. 7. Let rest 5 minutes, slice, and serve. Make the Dip In a small bowl, mix mayo, sour cream, taco seasoning, and mild sauce until smooth.
