@jasminseats: Nothing worse when an Anzac biscuit disguises as a rock… ya with me?? 2 cups rolled oats 1 cup all purpose flour 1/2 cup desiccated coconut 1/2 cup brown sugar (I subbed for coconut) Good pinch of salt 1/2 cup unsalted butter 1/2 cup honey or golden syrup 1 tsp vanilla extract 1/2 tsp bi carb soda (not baking powder) Preheat oven to 160 degs fan forced. Combine dry ingredients in a bowl. Melt butter over medium to low heat. Keep going until milk solids seperate and brown for brown butter, not necessary but highly recommended for a deeper, nutty-caramelly flavour. Once browned, low heat, add honey or syrup then bi carb soda. This will make it foamy. Add wet to dry and mix well. Roll into biscuits onto a lined tray. Bake for 12-15 minutes depending on oven and if you prefer them crunchier. At the half way mark, give them a lil flatten to increase surface area. If you are turning them into flapjacks, bake for the full 15 mins. #anzacbiscuits #anzac #anzaccookies
