Barberry Syrup Recipe! ❤️ one of my favourite foraged berries 😍 #onthisday last year! For this recipe I used Darwins Barberry (Berberis darwinii) but there are over 500 species of barberry and all are edible!  It is an evergreen thorny shrub growing to 3–4 m tall, with dense branches from ground level. The leaves are small oval, 12–25 mm long and 5–12 mm broad, with spiny edges. (You may want to wear gloves whilst picking, unless you want free acupuncture)! The fruit is a small purple-black berry 4–7 mm diameter, that ripens in summer. ✨ (The spring flowers are also edible and absolutely delicious)! Medicinal use of barberry dates back more than 2,500 years. Barberries are highly nutritious. They are rich in carbs, fibre, and several vitamins and minerals - particularly vitamin C! They also contain zinc, manganese and copper, all of which play significant roles in immunity and disease prevention. 🤒 The bright red color of the berries comes from anthocyanins, which are plant pigments that may boost your brain and heart health, among other benefits.  Barberries are rich in berberine, a unique plant compound that may be associated with several health benefits. Berberine is a member of the alkaloid family, a group of compounds known for their therapeutic effects.  Studies have shown that it acts as a powerful antioxidant, combating cell damage caused by reactive molecules called free radicals. It also helps to reduce blood sugar and cholesterol levels, slow the progression of certain cancer cells, fight infections, and have anti-inflammatory effects! ❤️ — For this recipe I used 2 cups of berries, 1/4 cup of water and 2 tablespoons of honey. 🍯 It’s better to have too little water than too much for this recipe, so you can pour in a little, and keep adding for desired consistency! 1. Pick berries 2. Wash berries 3. Boil berries with water and chosen sweetener for 10-15 mins 4. Mash berries with water 5. Boil for further 10-15 mins (I turned down the heat a little for this boil) 6. Strain through sieve or cheesecloth 7. Allow to cool 8. Store in air tight containers - either in the fridge or freezer 9.
