Ice Cream Layer •1 cup full-fat canned coconut milk •1/3 cup natural peanut butter •1/4 cup raw honey or pure maple syrup •1 tsp pure vanilla extract •1/4 tsp salt (use 1/8 tsp if using salted peanut butter) Peanut Butter Caramel •1/2 cup natural peanut butter •2 tbsp raw honey or pure maple syrup •1/8 tsp salt •3 tbsp full-fat canned coconut milk •Handful of peanuts (for topping) Chocolate Coating •9 oz dark or semi-sweet chocolate (I use dairy-free, refined sugar-free chocolate) •1 tbsp coconut oil (optional, but recommended) Instructions 1. Make the ice cream layer: Add all ice cream ingredients to a high-speed blender and blend until smooth and creamy. Pour into a standardloaf pan lined with parchment paper. Freeze for several hours, until firm. 2. Add the caramel layer: In a bowl, mix together the peanut butter caramel ingredients (except the peanuts) until smooth. Spread evenly over the frozen ice cream layer. Sprinkle peanuts on top and gently press them in. Return to the freezer for a few more hours, until fully frozen. 3. Melt the chocolate: Once the bars are fully frozen, melt the chocolate. Add in the coconut oil if using—this helps create a smoother, thinner coating. 4. Slice & coat: Remove the loaf pan from the freezer and transfer the ice cream slab to a cutting board. Slice into bars. Dip or coat each bar in melted chocolate, then place on a parchment-lined tray. Freeze again until the chocolate is fully hardened. 5. Serve & enjoy: Once ready to enjoy, remove the bars from the freezer. Let the bars sit at room temperature for a few minutes before eating for the creamiest texture.
