The beets add beautiful flavor too so don’t throw them out, they’re delicious. I don’t even bother with peeling the beets or turnips, just wash and scrub the peel.  For my carrots and onions, I like them a little sweeter so I add: • 2 tablespoons sugar per 32 oz jar • 1 tablespoon oregano • Bay leaves For cucumbers, I love adding fresh dill, whole garlic cloves, and peppercorns, but honestly this is where you can really make them your own.
