So today we’re making Pumpkin Chai Cookies: soft, chewy, loaded with warm chai spices, rolled in chai sugar, and—if you really want to commit to the cozy fall fantasy—finished with a chai-latte glaze. 🍂 Turn down the AC (if you are lucky enough to have it), pretend it’s 58° outside, and let’s bake. 😂🎃 YOU’LL NEED Cookie Dough • ½ cup unsalted butter, softened • ¾ cup packed dark brown sugar • ¼ cup granulated sugar • ⅓ cup pumpkin purée — NOT pumpkin pie filling • 1 large egg yolk • 2 tsp vanilla • 1¾ cups all-purpose flour • 1 Tbsp cornstarch • ½ tsp baking soda • ½ tsp baking powder • ½ tsp salt Chai Spice • 2 tsp cinnamon • 1 tsp ginger • ½ tsp cardamom • ¼ tsp cloves • ¼ tsp allspice • ⅛ tsp nutmeg • Tiny pinch black pepper Chai Sugar • ¼ cup granulated sugar • 1 tsp chai spice mixture HOW TO MAKE THEM 1️⃣ BLOT THE PUMPKIN Place the pumpkin purée between several layers of paper towel and gently press out some of the excess moisture. This little step helps give us chewy cookies instead of cakey pumpkin cookies. 2️⃣ MAKE THE CHAI SPICE Mix all of the chai spices together. Take 1 tsp of that mixture and combine it with ¼ cup sugar. Set this chai sugar aside for rolling the cookies. 3️⃣ MAKE THE DOUGH Beat butter, brown sugar and granulated sugar for about 2 minutes until creamy. Mix in the blotted pumpkin, egg yolk and vanilla. In another bowl, whisk flour, cornstarch, baking soda, baking powder, salt and the remaining chai spice. Add the dry ingredients to the wet and mix just until combined. 4️⃣ CHILL Cover and refrigerate for 30 minutes. Yes, you really do need to chill it. 😂 This helps keep the cookies thick and chewy instead of spreading everywhere. 5️⃣ ROLL Heat oven to 350°F. Scoop about 2 Tbsp dough per cookie, roll into balls, then generously roll each one in the chai sugar. Place about 2 inches apart on a parchment-lined baking sheet. 6️⃣ BAKE Bake for 10–12 minutes, until the edges are set but the centers still look slightly soft. Let them sit on the baking sheet for 5 minutes before transferring to a cooling rack. ✨ OPTIONAL CHAI-LATTE GLAZE Whisk together: • ¾ cup powdered sugar • 1–2 Tbsp milk or heavy cream • ½ tsp vanilla • ¼ tsp chai spice • Tiny pinch salt Drizzle over completely cooled cookies.
