Raspberry lemon crumble bread🍓🍋✨ Recipe: Ingredients Crumble -1/2 cup granulated sugar (100g) -3/4 cup all-purpose flour (95g) -5 Tbsp unsalted butter, cold and diced (70g) -pinch of salt Raspberry lemon bread -2 cups +1 Tbsp all-purpose flour (248g) -1 1/4 tsp baking powder -1/2 tsp baking soda -1/2 tsp salt -10 Tbsp unsalted butter, softened (141g) -1 cup granulated sugar (198g) -1 Tbsp lemon zest -2 Tbsp lemon juice -2 eggs, room temperature -1 tsp vanilla -1/3 cup milk, room temperature (80ml) -1 1/4 cups raspberries (tossed in 1 1/2 Tbsp flour) (120g) -3/4 cup white chocolate chips (128g) Lemon Glaze -1 1/3 cups powdered sugar (152g) -1 1/2 Tbsp lemon juice -1/4 tsp vanilla -1 Tbsp milk -1 tsp lemon zest Instructions For the crumble: 1. In a small bowl, stir together flour, sugar, and a pinch of salt. 2. Add the cold butter, diced into cubes, and use your fingers to rub the butter into the flour mixture until it forms small crumbs. Squeeze some of the mixture into larger clumps for a chunkier crumble. Place in the refrigerator in the meantime. For the raspberry lemon bread: 1. Preheat oven to 350°F. Grease and line a 9”x5” loaf pan. 2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl, add the sugar and lemon zest. Rub the sugar and lemon zest together with your fingers. 4. Add the butter and beat well until light and fluffy, about 3-5 minutes. 5. Add the lemon juice and mix just until combined. 6. Add the eggs, one at a time. Mix until combined. 7. Mix in the vanilla until combined. 8. Add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined. 9. In a small bowl, toss raspberries with 1 1/2 Tbsp of flour. Add the raspberries and white chocolate chips, and gently fold into the batter until just combined. 10. Transfer the batter to the loaf pan and sprinkle the crumble on top. Gently press the crumble just enough so it sticks. 11. Bake for 50–65 minutes. At 30 minutes, loosely tent with foil for the remaining bake time. Start checking for doneness around 45 minutes. The internal temperature should be 200–205°F when fully baked. 12. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack and cool at least 45 minutes before slicing. For the glaze: 1. In a small bowl, add powdered sugar, lemon juice, vanilla, lemon zest, and milk. Mix until combined. For a thicker glaze, add more powdered sugar. For a thinner glaze, add more lemon juice or milk. Evenly pour the glaze all over the loaf and sprinkle some lemon zest. Let it sit for about 15 minutes so the glaze sets. #raspberry #lemon #bread #baking #Recipe
