Make the Sauce In a mixing bowl, whisk together: * Coconut milk * Peanut butter * Thai curry paste * Soy sauce * Honey * Rice vinegar * Fish sauce * Lime juice * Garlic * Ginger * Chicken broth Whisk until smooth and combined. 3. Cook * Pour the sauce evenly over the chicken and bell pepper. * Cook on LOW 4.5 hours or HIGH 2.5–3 hours.  * Shred chicken slightly or leave whole (your choice). * Stir everything so the sauce coats well. Keep on warm and sauce will thicken.  5.
