@abigailfmarquez: Sisig Yaki Onigiri 🇵🇭🇯🇵 Recipe: Sushi Rice 300 g short grain rice 360 ml water 1 tsp salt Sisig 1 kg pork mask +ears 3L water 1 tbsp salt 5 cloves garlic 1 onion, quartered 2 pcs bay leaves 1 tsp whole peppercorns 250g chicken liver 4 tbsp cane vinegar 1 ½ cups of minced onion 2 tbsp calamansi juice 2 pcs red chili, sliced thinly 1/2 tsp ground black pepper 1 ¼ tsp salt 2 tsp sugar Procedure: 1. Boil pork with 1 tbsp. salt, garlic, quartered onions, bay leaves, and peppercorns. Simmer for 40 mins until tender. 2. Rinse and cook the rice in a rice cooker. Season with salt. 3. Drain pork and grill until lightly charred. Chop into a fine mince. 4. Grill liver until fully cooked and mash with 2 tbsp of cane vinegar. 5. Combine liver mix, pork, minced onions, red chili, calamansi, the rest of the vinegar, salt and pepper to taste. 6. Using an onigiri mold, fill with rice, add sisig in the center, top with more rice, and press into shape. 7. Brush onigiris with soy sauce and pan fry on both sides until golden. 8.
