Macros (4 serves) • 596kcal • 44.5g P • 73.6 C • 11.5g F Chicken: • 600 grams chicken tenders or breast cubed • 1 tsp each garlic powder, onion powder, chili flakes and ½ tsp salt and pepper Teriyaki Sauce: • 2 tbsp regular soy sauce • 2 tsp dark soy sauce • 1 tbsp ginger paste • 2 cloves garlic minced • 2 tbsp coconut sugar • 2 tbsp mirin • 2 tsp sesame oil • 1/4 cup water • 1 tsp cornflour Fried Rice • 4 cloves garlic minced • 1 small onion diced • 4 cups cooked day old rice • 2 eggs beaten • 1 carrot finely diced • 1 small red pepper finely diced • ½ cup peas • 1 heaped tbsp oyster sauce • 2 tbsp soy sauce • 1 tsp sesame oil • ¼ tsp white pepper • 1/3 cup spring onions thinly sliced Garnish: Sesame seeds 👩🍳 Method 1. Make the Teriyaki Sauce: Mix all teriyaki sauce ingredients in a bowl until smooth. Set aside. 2. Make the Fried Rice: Heat a wok or large pan over high heat. Add onion and garlic and sauté for 2 minutes. Add carrot and red pepper and stir-fry for 3–4 minutes until softened. Push vegetables to one side of the pan. Pour in the beaten eggs and let them set for 30-60 seconds, then break them up and mix through the vegetables. Add the rice, peas, oyster sauce, soy sauce, sesame oil and white pepper. Stir-fry until everything is evenly coated and hot. Finish with spring onions and set aside. 3. Chicken: Season chicken with garlic powder, onion powder, chili flakes, salt, pepper, and a drizzle of oil. Fry over high heat for about 4-5 minutes until golden and just cooked through. Remove from pan. Pour the prepared teriyaki sauce into the same pan. Simmer for a few minutes until thick, glossy, and slightly sticky. Return chicken to the pan and toss to coat in the sauce. Add a splash of water if it becomes too thick. 4. Serve: Plate the fried rice, top with sticky teriyaki chicken, and sprinkle with sesame seeds and extra spring onions. Delicious! 🤤
