I've learned from my batches to not trust other recipes to the same degree as your own intuition. I have not had any issues with my batches having off flavors except when I use a recipe that called for the pre made syrup/extracts you can buy. I personally experiment with different yeasts, honeys, and amounts of spices to achieve the desired goal, which may take months to years. I have a lot of mead recipes that taste better young, as certain flavors are more present, but when aged they get suppressed a fair amount. Lemon, specifically the peel, overpowers most berries in my aged brews even with a very small amount. I enjoy watching others make batches, especially flavors i never considered.
