I'd pick beef liver for meat choice because it's the most nutrient dense option.
I'd go with whole sardines (including skin, bones, head & gut) instead of salmon because they are lower in calories.
I'd go with red bell peppers instead of Kiwi for vitamin C & E (K is already covered with spinach).
But yeah, you gotta be locked in every day to hit all you micronutrients on 1000kcal without supplements.

Although I definitely don't agree, a person could just take vitamin and mineral supplements and whey protein powder etc to achieve their optimal macro nutrient levels along with a calculated diet of specific nutrients rich foods that equal the 1000 calories. 😳😏
