There’s another key thing that’s always missing in this conversation. Iroh didn’t become Zuko’s primary mentor until AFTER Zuko was exiled. Iroh did not have the opportunity to mentor Azula even if he wanted to.

Even in Azula’s solo comic we got not that long ago, she’s given the chance again to confront her past and learn from it and seek redemption, but she doesn’t want to get better. She doesn’t want to change. As of rn in the canon, she’s content in who she is.

Iroh also could influence Zuko because Ozai banished Zuko to chase the avatar. It’s easier because Zuko was physically FAR AWAY from Ozai, unlike Azula.

Iroh wasn’t given the opportunity to really be a mentor figure for Azula, he stayed with Zuko during his banishment years because he knew that Zuko needed somebody he couldn’t really be in two places at once ya know
