My mom used to make me what she called creamed rice for breakfast. Idk if that’s what everyone calls it but it was super simple and delicious. Sometimes she would throw an egg on top of we had them.

We grew up with a momma who was dirt road poor... rice and beans with cornbread was our staple. To this day I find comfort in some red beans cooked with pork hock served over white rice.

I remember a friend telling me her mom used to make baked potatoes and would use canned tomato soup as a sort of “gravy” for them. She was embarrassed because it was a “poverty dinner” but I thought it sounded delicious and comforting. Guess what? It is, and it’s filling. Get those bellies full, however you can.
