90's Style Scone Based Pizza The other day I got a DM from someone who couldn't believe I had a cookbook coming out, because my 'food is like 90's school dinners.' Such a weirdly specific insult, I honestly have no idea why this was the one that bothered me...  But do you know what, I flippin' loved 90's school dinners, so I thought instead of getting sad about it, I'd share this absolute 90's classic - so this one's for you Steve! My mum used to make this every week when we were kids...it's one of my favourite food memories 🥹 My cookbook Speedy 10 is out soon. Now, it's definitely not going to be Steve's cup of tea but if you want a cookbook full of simple dinners that are quick to make and do feel a little bit nostalgic. Recipes that you'll actually be excited about cooking, then Speedy 10 is for you.   I have written up the recipe for the pizza below. If you want to preorder SPEEDY 10, there's a link in my bio, Amy x Feeds 4 400g self raising flour 1 tsp baking powder 90g butter 270g milk 1 onion finely chopped 1 red pepper finely chopped 2 cloves garlic finely chopped 400g tin of finely chopped tomatoes  1 tsp oregano (plus extra to sprinkle on the top) 100g grated cheddar cheese (I used some mozzarella too) Salt and ground black pepper Heat the oven to 200C fan Add the flour to a mixing bowl. Stir in the baking powder and season with salt and pepper. Add the butter and use your fingertips to rub the flour into the butter so you have an even crumb. Stir in the milk and gather up the dough, pressing it together until you have a smooth ball. Roll out the dough on a floured surface to fit a baking tray cm x cm Line the baking tray and place the dough on top pushing it into the edges and corners. Make lots of indents with the prongs of a fork and bake in the oven for 5 minutes. In the meantime make the sauce. Heat a drizzle of oil in a large non-stick pan. Add the onion and red peppers and fry for 5 minutes until soft. Add the garlic for the final minute of frying. Stir in the tin of tomatoes and season with salt, pepper and oregano. Spread the sauce over the pizza base, right up to the edges. Top with grated cheese and another sprinkle of oregano. Bake in the oven for 20 minutes, or until the cheese is melted and golden brown. Cut into slices and serve with salad or chips or both!
