Creamy Cajun Chicken Stuffed Shells 🌶️🧀 These stuffed pasta shells combine tender Cajun-seasoned chicken with a rich, creamy cheese filling and a silky sauce. Baked under melted cheese until bubbling and golden, they make a comforting dinner with plenty of bold flavor. Ingredients 24 jumbo pasta shells 3 cups cooked chicken, chopped or shredded 2 tablespoons olive oil 2 tablespoons Cajun seasoning, divided 2 tablespoons butter 3 cloves garlic, minced 1½ cups heavy cream ½ cup chicken broth 4 oz cream cheese, softened 1 cup shredded mozzarella cheese ½ cup grated Parmesan cheese 1 cup shredded Monterey Jack cheese ½ red bell pepper, finely diced 2 tablespoons fresh parsley, chopped Salt and black pepper to taste Preparation Steps Preheat the oven to 375°F (190°C). Cook the jumbo shells in salted water until just al dente. Drain and set aside. Heat the olive oil in a skillet over medium heat. Add the cooked chicken, bell pepper, and 1 tablespoon Cajun seasoning. Cook for 3–4 minutes, then remove from the heat. Melt the butter in a saucepan. Add the garlic and cook for about 30 seconds. Pour in the heavy cream and chicken broth, then stir in the cream cheese until smooth. Add Parmesan and half of the mozzarella to the sauce. Season with the remaining Cajun seasoning, salt, and black pepper. Cook gently until creamy and slightly thickened. Mix the chicken with enough of the creamy sauce to create a moist filling. Stuff each cooked pasta shell generously with the chicken mixture. Spread some sauce across the bottom of a baking dish. Arrange the stuffed shells on top, spoon the remaining sauce around them, and sprinkle with Monterey Jack and the remaining mozzarella. Bake for 20–25 minutes until hot and bubbling. Broil briefly at the end if you want lightly browned cheese on top. Sprinkle with fresh parsley and serve warm.
