Actually roasting your tomatoes, pepers and onions elevates the taste of the stew. Personally frying is un healthy. Better to grill in the oven. I do not eat chicken, guinea fowl is what I eat or occasionally poussain

This was my favorite when I was in an African foster home. This with jollof/plain rice or with fufu, another soup I liked was egusi. I haven't had this in years now that I'm not there anymore 😭
