Boiled maize is generally better than ugali because it’s less processed and keeps its natural fiber and nutrients, which helps you stay full longer, supports digestion, and releases energy slowly, while ugali being made from refined maize flour is lower in fiber, digests faster, can spike blood sugar, and is easier to overeat, especially if you’re working toward fat loss . I honestly don’t thing carbs are entirely bad . My 2 cents.

No but there's complex and simple carbohydrates. You can eat boiled or roasted maize cause it still has all the fibre that reduces the way your body absorbs the sugar. ugali on the other hand is a simple carbohydrate cause they have removed all the fibre. So eating boiled or roasted maize is waaaaay better than Ugali.
