@ashleylamego: Italian Almond Olive Oil Cake ✨ 1 cup of sugar 4 eggs (separated) Zest of 1 orange 1 cup of granulated sugar 1 tbsp of freshly squeezed orange juice 1/2 cup of extra virgin olive oil 1 tsp of almond extract 2 cups of almond flour 1/2 tsp of baking powder Pinch of salt Almond slices for topping Icing sugar for garnish Preheat oven to 350 F. In a large bowl blend together sugar, orange zest, and egg yolks for about 2-3 minutes until light and creamy. Pour in orange juice, olive oil and almond extract. Blend until combined. In a separate bowl add almond flour, baking powder and a pinch of salt. Slowly add to the wet ingredients. In a small bowl blend egg whites until stiff peaks form. Fold into the batter until you can no longer see the egg whites. Transfer to a greased 9 inch springform pan. Top with almond slices. Bake for 35-45 minutes.
