Dinner Under The Influence: Cheesesteak with homemade Cooper Sharp Whiz Todays a bit different of a DUI than usual - as I was put in a small coma by my consumption and then awoke late for my usual recording. The bread isn’t the seeded semolina that I wanted - but everything else was about as good as it gets. My three tips for my preferred kind of cheesesteak: 1. The steak has to be THIN. Either by it being preshaved, or freeze a ribeye and shave it yourself - but make sure to chop it thoroughly either in the pan or before cooking. Im looking for a papery thin, chipped beef type texture when im having a cheesesteak. 2. I dont go with bell peppers or super large onions - to me they are textural disruptions that make it feel more like a fajita sandwiches. Finely chopped onions, cooked until soft and caramelized, and then recooked with the meat is perfect for me. And cherry peppers add way more acidity and spice and really everything to the sandwich for me than bell peppers. 3. @Cooper Cheese is the cheese for me. The melt of classic american with a sharpness that elevates everything else. Adding it to the steak to cook and then making a simple whiz out of it has been my sweet spot for a sandwich that feels elevated from the velveeta whiz without going fully pretentious.  This may be not loaded enough of a sandwich for the more gluttonous eaters, but I always look for a perfect, contained bite that doesn’t make my face and shirt a mess. I am a mess enough as is.
