In a heatproof bowl or pan, add peanut butter, garlic, spring onion, shallots, chilli crisp, and fresh chilli. 2. Heat the vegetable oil until hot, then carefully pour it over the mixture to sizzle everything. 3. Add soy sauce and lime juice, then mix until smooth and glossy. 4. Toss in your freshly boiled noodles and coat well. 5. Serve topped with cucumber and an extra squeeze of lime 🍋‍🟩
