what you showed is not couscous it's perl shaped pasta, not being a know it all or rude, just trying to help you out since it's my culture (I'm north African) and as a chef I think you'd want to know that, couscous is much smaller and thinner and made with semolina, hope this helps

If you cover the carrots in foil while in the oven, they steam themselves and cook quicker! Just remove the foil to get a nice colour on them
