Bharuchi Style Dhal Chaval  (with Lamb or Chicken) Ingredients Masala Base Oil 1 tsp cumin seeds 1 star anise 1 cinnamon stick 3 cloves 3 peppercorns 2 bullet chillies 2 cubes ginger 2 cubes garlic 2 tbsp methi (fenugreek leaves) 1 tbsp chopped green chilli 3 tomatoes, blended (or ½–1 tin chopped tomatoes) 3 tbsp pre-fried onions, crushed (If using fresh: sauté 2 chopped onions at the start) 1 tsp salt 1 tsp chilli powder 1 tsp coriander powder 1 tsp cumin powder ½ tsp turmeric 1tsp garam masala  Lamb  Oil 1 white onion, diced Pinch saffron Mint leaves Cumin Cinnamon Ginger & garlic cubes Cloves & peppercorns Dhal 1½ cups toor dhal Water Salt Oil Cinnamon Cloves Peppercorns Rice 4 cups basmati rice, washed Oil 1tsp Cumin seeds Cinnamon stick Cloves 1 onion, sliced Salt to taste (I use 1tsp per cup of rice)  Method 1. Make the Masala Heat oil in a pan. Add whole spices: cumin, star anise, cinnamon, cloves & peppercorns. Add bullet chillies, ginger & garlic cubes, methi and chopped chilli. Cook until fragrant. Add all ground spices. Add blended tomatoes and crushed fried onions. Cook, stirring often, until the masala becomes thick and deep in colour (20 mins) Add water if it sticks. 2. Cook the Lamb (Skip if using Chicken) Add lamb, onion, saffron, mint, cinnamon, ginger, garlic, cloves & peppercorns. Pressure cook for 15 minutes (or simmer on the stove until tender). 3. Cook the Dhal Pressure cook toor dhal with water, salt, oil, cinnamon, cloves & peppercorns for 25–30 minutes until soft. 4. Combine If using chicken: Add raw chicken directly into soft boiling dhal, then add the masala and cook until chicken is done. If using lamb: Add cooked lamb to the dhal and masala mixture. Simmer together so flavours combine. 5. Rice Heat oil, add cumin, cinnamon & cloves. Sauté sliced onion until brown. Add water, salt and rice. Boil until water evaporates, cover, reduce heat to low. Steam for 20 minutes. 6. Finish Sprinkle 1-2tsp of garam masala  Make a quick tadka with butter and coriander. Pour over the dhal mixture.
