They are easy to cook and will leave you feeling satisfied and nourished after a long day. Think indulgent pastas, decadent rice bowls, baked crispy chicken, pimped up ramen and so much more. Serves 2 Ingredients: - 2 tbsp smooth peanut butter - 1-2 tbsp water - 1 lime juiced - 1 tsp honey - 1 tbsp soy sauce - 1/2 tbsp ginger - 2 salmon fillets - 1 large sweet potato - 90g edamame - 100g radishes - 100g broccoli - 200g quinoa - 100g spinach - 1 tbsp chilli flakes - 1tbsp olive oil - salt & pepper Method: 1. Preheat oven to 180c 2. Chop up your sweet potatoes into 2cm chunks, cover with 1/2 tbsp olive oil and salt and put into the oven for 30 minutes 3. Put the salmon on a baking tray and sprinkle with salt and 1/2 tbsp olive oil, then put in the oven at for 15 minutes 4. Blanch the broccoli in boiling water for 1-2 minutes and then add into cold water 5. Thinly slice the radishes 6. Mix the peanut butter, lime juice, soy sauce, honey and ginger paste in a bowl and then add in 1tbsp water until the consistency is light and creamy (can add more water if needed) 7. Plate up the spinach, quinoa, radishes, broccoli, sweet potatoes, edamame 8. Add the salmon and drizzle sauce on top, finish with a pinch of chilli flakes
