If I use fruit juice instead of water when I’m making jelly (uk jello) then I usually put a bit less liquid in than needed and it sets well.

It’s the enzyme in the pineapple … believe it or not fresh is even worse for using for certain things. lol

The pineapple juice has an enzyme in it that doesn’t allow the gelatin to set up. When making homemade jello, it’s recommended not to use pineapple juice as the flavor because of that reason.
