molasses cookie ice cream sandwiches☺️💗 recipe below! #asmr Cinnamon Ice cream: 1 cup whole milk 1 cup heavy cream 4 egg yolks 1/2 cup sugar 1 tsp vanilla bean paste 1/2 tsp cinnamon Pinch of salt Ginger Molasses Cookies: 3/4 cup melted butter 1 cup sugar + more for coating 1 egg 1/4 cup molasses 2 cups all-purpose flour 2 tsp baking soda 1/2 tsp salt 2 tsp cinnamon 1 tsp ground cloves 1 tsp ground ginger Instructions: 1 For ice cream: heat milk and cream in a pot on medium low heat until hot to touch. In separate bowl, whisk yolks and sugar until light in colour. 2 Add 1/4 cup of the heated milk to the egg yolks and whisk to combine. Add the rest of the liquid to the yolks, whisk and return to pot. 3 Add a candy thermometer and heat on medium low and whisk consistently until it reaches 165F. 4 Add to a glass container and refrigerate overnight or for at least 2 hours. 5 Add to a kitchenaid ice cream attachment or ice cream machine and churn until thick. 6 Add to plastic wrap and roll into a log quickly and add it to the freezer. For the cookies: 1 Cream butter, sugar, molasses, and the egg until combined with a hand mixer. 2 Sift in dry ingredients and mix once again. 3 Cover the dough and refrigerate for at least an hour. 4 When the dough is ready, preheat the oven to 375F, and roll balls of dough in granulated sugar. Bake for 10 minutes. When the cookies are cooled, cut the ice cream into disks and add to the cookies!
