Can you put this amount of dough into a loaf pan and not a Dutch oven? Or would it need to be divided into two loaf pans?

What am I doing wrong I’m on my 4th pull and flop and my dough feels so sticky and keeps breaking. It doesn’t feel ready for coil folds yet. This is what it looks like right after the 4th fold.

After the pull and folds and the coil folds, can I let it sit on my counter for a few hours or do I HAVE to let it sit in the fridge overnight? Sincerely, a scared first time sourdough loafer!

Ok… I have a question…. And I know reading it, it might sound SO RUDE! But I really mean it genuinely. Because I know NOTHING about this. Watching all these videos, sour dough takes DAYS just to get 1 loaf of bread. What is the point? Why is it worth it? I know it must be because so many people love it, and I’m obsessed with watching the videos of “how to” lately. But I don’t know why it’s such a trend right now. When it takes like a week to make a starter. And then days and so much work just for 1 loaf. But I want to know!! My tone in writing this is sincere, not snarky! I’m curious to try it out, but I want it to be worth my time. I recently made naan bread and that was NOT worth my time 😂 I did not do it well. I’m nervous to take a week and a half, and all of the money to get the stuff, and then mess it up in the end anyway
