@kaycooks_: SHRIMP CEVICHE RECIPE: - 1.5 Ibs. of shrimp - 10-12 limes (enough to fully cover the shrimp) - Salt and pepper to taste - 4 Roma tomatoes - 1/4 white onion - 1/2 red onion - 1 jalapeno - 1 English cucumber (remove seeds and peel) - 1/2 cup chopped cilantro - 2 chiles de arbol - 1 tbsp soy sauce - 1 tsp salsa negra for mariscos STEPS: Peel, devein, and chop shrimp into bite-sized pieces. Place in a bowl and fully cover with fresh lime juice. Season with salt and pepper, then refrigerate for 30 - 45 minutes until shrimp turns opaque. While that marinates, dice tomatoes, onions, jalapeño, and peeled cucumber (seeds removed). Finely chop cilantro and crush chiles de árbol. Add all chopped ingredients to the shrimp. Mix in soy sauce and salsa negra for mariscos. Taste and adjust salt, refrigerate for another 20 min and enjoy chilled #cevichedecamaron #shrimpceviche #summermeal

It’s kind of concerning how many people don’t know that cooking & denaturing are two different things… this IS raw. This is a raw dish. Lime juice does not “cook” shrimp/fish, it just chemically changes the composition. It is still raw. Which is fine as many people enjoy it. But it’s not cooked. It’s just raw, with a different texture because the proteins were changed.

the citric acid chemically "cures" or denatures the proteins in the shrimp. This process changes the shrimp's color from translucent grey to opaque pink/white and firms its texture so it mimics cooked seafood. ✌
