#ad This Smokey Sweet BBQ sauce from the makers of @ballcanning is perfect to make in small batches or to can! The recipe is super simple and everyone will love this sauce. #BallhomecanningAmbassador   Recipe:  Yield: about 12 pint jars or 6 quart jars  12 pounds tomatoes (about 36 to 48 medium) 3 cups finely chopped onion (about 2 1/2 to 3 large) 4 cloves garlic, minced 2 cups dark brown sugar 2 tablespoons salt (optional) 2 tablespoons ground smoked paprika 1 tablespoon garlic powder 1 tablespoon ground mustard 2 teaspoons chili flakes or crushed red pepper 1/2 teaspoon ground cayenne pepper 1 1/2 cups cider vinegar, at least 5% acidity  1/2 cup bourbon  PREP: Wash tomatoes under cold running water; drain. Remove core and blossom ends. Cut tomatoes into quarters. Peel onions and remove root and stem ends. Finely chop onions; measure 3 cups chopped onion. Peel and mince garlic.  COOK: Combine tomatoes, onions, and garlic in a large saucepot. Bring to a boil over medium-high heat. Reduce heat to a simmer. Simmer until vegetables are soft, about 30 minutes, stirring frequently. Remove from heat. Puree tomato mixture using an electric food strainer or food mill to remove peels and seeds. Return puree to saucepan. Add sugar and spices, stirring until sugar dissolves. Stir in vinegar and bourbon. Simmer puree to thicken about 1 1/2 to 2 hours, stirring to prevent sticking.    FILL: Ladle hot sauce into a hot jar, leaving 1/2-inch headspace. Remove air bubbles. Clean jar rim. Center lid on jar and adjust band to fingertip-tight. Place jar on the rack in boiling-water canner with simmering water (180F). Repeat until all jars are filled. PROCESS: Water must cover jars by 1 inch. Adjust heat to medium-high, cover canner, and bring water to a rolling boil. Process pint jars or quart jars 20 minutes, adjusting for altitude. Turn off heat and remove cover. Let jars cool 5 minutes. Remove jars from canner; do not retighten bands if loose. Cool 12 hours. Check seals. Label and store jars.    #Ballhomecanning #NewellBrands #canning Ball® and Ball logotype TMs Ball Corporation, used under license.
