@lori_ilc: Lemon tiramisu 🍋 Sunshine in every bite! ✨ Lemon Curd: 4 large egg yolks 2/3 cup granulated sugar 1 tablespoon lemon zest (about 1 lemon) 1/3 cup lemon juice (freshly squeezed) pinch of salt 6 tablespoons unsalted butter (room temperature) Lemon Syrup: 1 cup water ¾ cup lemon juice (freshly squeezed) 1/2 cup granulated sugar Whipped Mascarpone: 8 oz mascarpone cheese (room temperature) 1 tablespoon lemon zest 1 ½ cups heavy whipping cream Assembly: 1 package lady finger (7 oz package, (about 24 lady fingers) Optional: white chocolate grated on top (as garnish) -Zest and juice the lemons, then set aside. -Bring about 2 inches of water to a simmer in a small saucepan. -In a heatproof bowl, whisk together egg yolks, sugar, lemon zest, lemon juice, and a pinch of salt. -Place the bowl over the saucepan (double boiler style) and cook on medium-low heat, whisking constantly, until thickened (about 10 minutes). -Remove from heat and stir in the butter until smooth. -Transfer to a clean bowl and press plastic wrap directly onto the surface. Refrigerate while you prep the rest. -In a saucepan, combine water, lemon juice, and sugar. -Bring to a boil, stirring until the sugar dissolves. Let boil for 5 minutes, then remove from heat and cool completely. -In a large bowl, beat the mascarpone, whipping cream, and lemon zest until stiff peaks form. Don’t overmix! -Quickly dip each ladyfinger in the lemon syrup and line the bottom of an 8×8 pan. -Spread half of the mascarpone mixture on top. -Add half of lemon curd mixture. -Repeat with another layer of dipped ladyfingers, the remaining mascarpone, and the other half of the lemon curd. -Optional: garnish with white chocolate, lemon zest, and/or lemon slices! 💛 #lemondesserts #tiramisu #homemadetiramisu #tiramisurecipe #nobakedessert

I made it! its really really good its lemony without having too much lemon but turns out I'm not a super huge fan of ladyfingers so I'm thinking of using nilla wafers next time

if you want to level this up, zest the lemons and use your hands to press it into the sugar before using it, the heat from your hands will allow the natural oils in the lemon zest to mix with the sugar and give a more powerful lemon taste!! it should feel like wet sand 💛
