SUNDAY RICE EPISODE 13 | Chinese Chicken Stir Fry with Rice Be honest, what’s that ONE vegetable you always pick out of your stir-fry INGREDIENTS For the Chicken Marinade * 4 boneless, skinless chicken thighs (500 to 600 g) * 1 tbsp soy sauce * 1 tbsp Chinese cooking wine * 1 tbsp cornstarch * ¼ tsp white pepper For the Stir-Fry Sauce * 1 tbsp soy sauce * 2 tbsp oyster sauce * 1 tbsp Chinese cooking wine * 1 tsp toasted sesame oil * 1 tsp sugar * 2 tsp cornstarch * ¼ tsp white pepper * ½ cup (120 ml) water or unsalted chicken stock Vegetables & Aromatics * ½ red bell pepper * ½ green bell pepper * 1 medium onion * 1 carrot * 4 garlic cloves, minced * 1 tbsp grated ginger * 2 tbsp cooking oil * Chili flakes, optional For the Rice * 2 cups golden sella basmati rice * Water, as needed * Pinch of salt INSTRUCTIONS 1. Cut the vegetables into thin strips. Mince the garlic and grate the ginger. 2. Slice the chicken into bite sized pieces. Add the marinade ingredients, mix well, and leave to marinate for 10 to 15 minutes. 3. Combine all the stir fry sauce ingredients in a bowl, mix until smooth, and set aside. 4. Rinse the rice and cook with water and a pinch of salt according to the package instructions. 5. Heat a wok or large pan over high heat. Add the cooking oil and chicken. Stir fry until nicely browned and almost cooked through. Avoid overcrowding the pan. 6. Add the onions, garlic, and ginger. Stirfry briefly until fragrant, then add the carrots. Cook for another 1 to 2 minutes. 7. Add the bell peppers and stir fry for about a minute. 8. Give the prepared sauce another stir, then pour it into the pan. Toss everything together as the sauce thickens. Add chili flakes if you like a little heat. 9. Continue cooking until the chicken is fully cooked and the sauce is thick and glossy. Serve hot with your fluffy rice and enjoy! #sundayrice #kikifoodies
